I'm new to MCUs. I'd like to know if anyone can tell me where I can find a good tutorial on how to use the interrupts on the MCF51QE128.

Are you using CodeWarrior? If so, there are example projects in C that you could try to follow to learn how to use interrupts. There is an example project specifically for the DEMOQE128 which toggles the LED and buzzer.
