ADC configuration and result of conversion

I'm working on a project that basically consists in making the energy measurement using the MCU MCF51EM256. So I need to set up at least two channels of ADC and have access to the results of measurements to make calculations of energy and power.

Someone could teach me how to make this setting the ADCs and how to access the values? I read the reference manual but realize that it lacks examples for my purpose.

Attached is an old sample code for ADC, the DEMOEM software includes an ADC16 driver with calibration functions. It was based on CW6.3, quite old but the sample itself is a good reference.
