Interniche stack provided by Freescale on ColdFire EVB is quite complicated!
Does anyone have modified it for a simple UDP protocol application?

After application (for educational/hobby, evaluation or commercial use as appropriate) you will receive the complete project including source and a powerful simulator. This is set up for CW6.3 on the EVB or DEMO board.

If you would like to simply run the uTasker demo project on your hardware you can freely try this by downloading the target code from the software page:
http://www.utasker.com/software/software.html

The default IP address of the board will be 192.168.0.3 and can then be changed and saved via web browser, Telnet or UART. Follow the step-by-step instructions for loading to your board in the Coldfire tutorial:

The default web pages are also at the software link. You can change them if you wish and simply load them via FTP to the target.

Try the uTasker stack (www.uTasker.com). It is free for non-commercial work and fully supported - even for students.
It was designed especially for educational purposes (as well as serious commercial projects) and so is easy to understand and fun to work with.
It is delivered with a fully functional M5223X project for CW6.3 including tutorial and a real-time simulator allowing the project also to be tested and further developed on a PC.

As well as the TCP/IP stack it is a RTOS and has most device drivers (3 x UART in interrupt or DMA modes, QSPI, ADC, CAN, I2C, Ethernet, FLASH File system) and also supports an external file system via SPI EEPROM.
