Is it possible to setup different build profiles with different base addresses?

not sure what you exactly mean, but if it is about changing the linker file and using different addresses e.g. for a bootloader application, you can use the NXP MCUXpresso IDE and FreeMarker scripts for this: https://mcuoneclipse.com/2019/10/06/linking-bootloader-applications-with-eclipse-and-freemarker-scripts/

I simply want to have the base address change in MCU Settings based on the build profile:

It is not possible to change anything about the MCU based on the build profile, including the address map.
