Hi.

I'm using S32G-VNP_RDB2.

And I want to Serial Boot mode to download my application code(RGB LED code).

Is there any document to follow?

I want to boot from NOR flash.

Is there any document to make .bin image for NOR flash?

See this post for information on Serial Boot support. For making bootable binaries for QSPI NOR Flash, see S32 DS User Guide, Section titled "Debugging with S32 Debug Probe from flash for all other targets". The document is located under S32DS\help\pdf\. The path is from your S32DS installation directory.
